Regiospecific Analysis of Triacylglycerols of Some Seed Oils by Pancreatic Lipase

Abstract
The regioanalysis of the fatty acid composition using pancreatic lipase has been applied to three seed oils, namely sesame, perilla and coconut oil. Fatty acids in sesame oil were equally distributed between the primary position (sn-1,3) and secondary position (sn-2), however, linoleic acid was esterified more to the primary position. In perilla oil, linolenic acid, which was major unsaturated fatty acid (about 60£¥), was esterified to sn-1,3 position. For coconut oil triacylglycerols, the major fatty acid, lauric acid, was preferentially attached to sn-2 position, while myristic and palmitic acids were preferentially esterified to the position sn-1,3.
